We had our first Q and A session this week. We had some great questions brought to us from those in attendance! From Jason demonstrating a proper plank position, to a lengthy conversation on new ideas to prepare vegetables, the conversation was diverse and hopefully informative. We did spend some time as a group talking about how to roast vegetables and the wonderful flavor roasting brings out. While I have only roasted fresh vegetables, the question was posed if you can roast frozen veggies. I have never tried this and so I could not answer to the specifics of how to go about it. Luckily, one of the participants e-mailed me a couple of recipes for roasting frozen brussel sprouts. (If you think you don’t like brussel sprouts, roast them and see what you think!) Here are links to recipes #1 and #2 that were sent my way. Also, I realize winter is not here yet. However, this is my favorite recipe for Roasted Winter Vegetables. I can’t wait to make it as the days get cooler! So delicious!
In other events related to MSU on the Move, I was on a local TV program making a smoothie and healthy snack. The idea behind these recipes is that they are super easy and healthy. The first recipe I made was for snack marbles. These are nutrient dense and can be made on the weekends and kept ready to go in the fridge. They have about 2 grams of fiber and protein per each small serving. Do note that they have about 100 calories each, so watch your portion control. But if you are too busy to stop and eat, much less make a snack, these are a great idea. Also, smoothies are a favorite of mine. They can be made from whatever healthy ingredients you like. Whether you need low calorie, high protein, high fiber, high calcium or just need a breakfast on the go, you can find a smoothie to fit your needs.
